Do the injectors make the noise as in Mike video when you press the plate down further?
With the fuel pump running, press the plate down until you do get the injector noise and note roughly how far down the plate is to achieve it.
Note that when the injectors do spray fuel, you are spraying fuel into a non running engine and it can dilute the oil in the cylinder/ cause a hydraulic lock, so only do it briefly in 5 seconds maximum overall, then leave for at least 24 hours foe the fuel to evaporate.
The increase of the coil at the voltage during cranking is normal, this is the relay to the left of the ballast resistor being energised from the starter solenoid. The contacts of the relay shorts out/ bypasses one of the ballast resistors so increasing the voltag at the coil to compensate for voltage drop with the current load of the starter motor in operation.
The 'plumbing' in the picture is the fuel pump bolt that is likely to have the 'check valve' (non return valve), which should not be removed from the system.
Time for you to do fuel pressure tests.
If you weren't far down south I'd have come and got the engine running again for you.
