I would recommend Lee Pattison for those, loads of us have used him for trim work over the years, he can work miracles. His binnacle recovers are the best I have seen, as his only has one small stitch line showing. Some before and afters below.

Re the speakers I would recommend replacing them 5.25" size in the rear, they sound a lot better than the OEM oddball 4" x 10"
I second the comment about Lee Pattison's excellent work. My seats were in a really bad state with a huge "divot" in the driver's side seat and the covers on their way out. Lee repaired the seat and replaced the covers with new OE stock so they look absolutely perfect now.
