That VR6 conversion over on dmctalk would be the ticket. It leaves plenty of room around the engine unlike some of the V8 conversions, and it must weigh a fair bit less too.

The VR6 is impressive, but under powered in NA form (170Hp in later OBDII form). A better one would be the enlarged 3.2 VR6 in the R32 (250Hp) or better yet US R36 (270Hp).

OR

Go completely left field what a bout a W8 from a passat?

From Tyson:

This is a guy in Oz called Nick Holden. He doesn't know what the engine is, but it isn't stock :)

That's a 6 litre Chevy LS2 engine. 400HP.

Nick H has a D, but is that his?

There is, perhaps unbelieveably, another LS2 conversion ongoing in Oz:

And this is Nick R's LS1 car in the US. Only 350HP

If I hadn't gone for the Legend-style engine I would have tried swapping in a W12 from a first-gen Phaeton. Would probably do horrible things to the weight distribution and be hell to integrate, but it would be awesome. :)
